#meatlessmonday family dinner is Minestrone 🍲 with toasted sourdough + an olive oil drizzle. Many whole foods go into this soup, 🍅+🥕+ 🍃 + celery + peas + beans, vegetable stock, whole wheat pasta shells, among numerous seasoning, spices and a whole lot more. While the temperature is still 🔥 here, it’s the perfect soup for fall and winter to help boost immunity, I make 7️⃣ quarts so my family can eat it for days. It’s one of my #vegetarian husband’s favorites, our daughter loves it and it’s growing on our son 👍🏼. Last night I tried a vegetable that I hate. Squash. I'm well aware that being vegetarian I need to broaden my vegetable & grain world and take on things I wouldn't go near in the past. So this weeks challenge is spaghetti squash. Guess what? I didn't hate it. I took from two different recipes. One was for goat cheese and spinach and the other added crunchy stuff and tons of lemon. In the end I didn't hate it but that lemon was too much. The recipe called for tons of lemon but it was just too overpowering. And as much as I love goat cheese, next time I'll use a stronger bold flavour like sharp cheddar. And os course I used brocolli not spinach. Anyway, I'll definitely try spaghetti squash again. [FOOD] "The Hangover Cure." DIRECTIONS: 1) Place spinach, coconut water, and cucumber in blender and blend until smooth and juice like. 2) Add carrot, celery, and ginger.
