Another quick and easy vegan dish (recipe included below) This delicious corn risotto is great for lunch or dinner, and it's kids approved 😉 Enjoy the recipe: ----- INGREDIENTS * 3 Cups Vegetable Broth * 1 Tbl Extra Virgin Olive Oil * 1/2 of a medium chopped Onion * 3/4 Cup Brown Rice * 1 Cup frozen organic Sweet Corn * 1/2 Cup Sweet Peas * 1/4 Cup nutritional yeast * Salt and Pepper to taste * Fresh Italian Leaf Parsley for garnish DIRECTION * In a large pan, add the oil and sauté onion over medium heat for 2-3 minutes, or until onion is softened. *Add rice and saute for 3 minutes, or until rice is opaque. Stir constantly. *Add vegetable broth and cook for about 10 minutes. Stir frequently. *Add the corn and peas and cook for another 15 minutes or until the rice is tender and creamy. *Stir in nutritional yeast and season with salt and pepper. *Garnish with fresh parsley and enjoy! 😊🌱 #veganfoodie

Hummust be pretty close to turning into a chickpea at the rate I eat this stuff. •• Featuring: Basil pesto hummus with baked pita bread. For the hummus I just added 2 cans of rinsed chickpeas, a squeeze of lemon juice, 3 T of olive oil, and a dash of salt and pepper to a food processor and processed extra long (6-7 minutes) to ensure fluffiness (major 🔑). Next, I added a few table spoons of homemade almond pesto. And finally, I baked some pita bread in the over with some olive oil and sea salt. •• Happy Friday, we made it people. Driving home, I see a billboard for the gym that says, "working out lowers cholesterol". 👌 True. Working out CAN lower cholesterol temporarily - assuming your cholesterol is too high. But if you need to lower your cholesterol, you know what would make the most sense? Removing it from your diet. What is the point in trying to fight against something you can prevent from ever happening in the first place? Consuming cholesterol DIRECTLY raises serum cholesterol levels. This is why cholesterol immediately drops when you remove it from your diet completely... 🤦 Otherwise, eating it everyday, and then going to the gym (or taking supplements/medications) is contradictory and a never ending cycle. Anyway, that is all. Carry on with your scrolling 😂

Vegan fried rice deliciousness!!! First, chop up and steam broccoli crowns in water, and then add minced garlic with a tiny drizzle of olive oil. Then, cook carrot bits, and green beans in some water until you see the colors brighten. Now, add brown rice and the broccoli with liquid aminos, miso sauce, minced garlic and olive oil (not too much). Stir it up, mix it. This fried rice is a solid meal that fills me for hours because of all the wholesome micronutrients in the veggies and brown rice. I notice when I cook with too much olive oil I feel really heavy and tired after my meal, so that’s the main reason I like to be mindful of how much I use. You’d be surprised at how much oil is in all of the foods we eat throughout the day. Try taking a closer look at how much oil is in everything you eat, and notice how you feel when you decrease that a bit. From all the books and research I’ve studied from plant based doctors and school, I’ve learned that the main thing with oil is while it may contain healthy fats, it’s a highly processed food, it contains about 100 calories per tablespoon (the main idea is there’s a lot of energy in very little oil, I could care less about calorie counting), and can easily be over consumed in a much higher proportion than recommended (about 30% of total daily calories should come from fat). Instead, it’s recommended to consume your healthy fats from a variety of nuts and seeds. They’re more filling because it is a whole food, intact with fiber. It took me a while to retrain my tastebuds and get rid of the habit of oiling up the pan, but I honestly feel soooooo much more energetic and full of life without all that oil, and it helped decrease breakouts. Plus, once I became conscious of the amount of oil I consumed in a day I was sort of disgusted. It’s literally in EVERYTHING! So now, I genuinely enjoy the pure taste of my veggies, and it’s so flavorful I love it!
