Dat dhall. 👌🏼 I love a good, tempered yellow dhall. Once you know the simple tricks to a good dhall, you'll want to eat it forever! . 🍛My two biggest tips: lots of oil, lots of spices. . 🍛To make a decent batch, I sautee a finely diced onion (or ~1/3 a leek if you don't eat onion) in about 1/3 cup of sunflower oil for a minute before adding a few cloves of minced garlic (I love garlic so I add close to a whole bulb!) and approximately: . 2 tablespoons each of cumin, ground coriander, turmeric and garam masala. . 1 tablespoon of ground fenugreek . 1 teaspoon each of ground ginger, mustard seeds, salt, white pepper and chilli flakes. . 🍛Sautee the spices for a few minutes, stirring to keep them cooking evently, then add about a cup of red split lentils. . Mix thoroughly and add a few cups of vegetable stock. . 🍛Keep adding water as the dhall reduces - just enough to keep it 'loose' but not watery. The lentils should only take ~10 minutes to cook and will thicken slightly as it cools. . 🍛Season to taste with salt and lemon juice (preserved lemons are great if you have them) and serve with good-quality basmati rice, a dollop of coconut yoghurt and some greens! . 🍛This time I also made some fried tofu by tossing firm tofu in some garam masala, corainder, turmeric, chilli & salt with a sprinkle of tapioca flour (conflour will also be fine) and shallow-frying until crispy. . The textures of the rich dhall, fresh greens & crispy tofu are heavenly!
