#TheRevolutionRelease Volume 13 “Our first few barrels were unpeated but we were encouraged by Ron Sutherland, Laird of the Hobart Gillies Club, to make a peated whisky. Initially we were able to buy ‘Tasmanian Highland’ peat from a local horticultural supplier, and with an idea from Lyn we developed a process of peat smoking the malted barley we purchased from Cascade Brewery. A short time later we were told that the Tasmanian peat was no longer available and we would have to purchase peat from Lithuania. Whilst it may have been good peat, it was not from Tasmania and it was important to us to be using Tasmanian ingredients as much as possible. I was cycling between Glenkinchie distillery, where I was a tour guide, and the Scotch Malt Whisky Society, where I was a Bartender, when three familiar faces and one I had never seen before towered out of my peripheral vision, causing me to stop and stare. In 150ft high projections on the Salisbury Crags in Edinburgh were the faces of William Grant; The Glenfiddich Stag; Masetaka Taketsuru and someone who looked a lot like Charles Darwin. Confused, I cycled on.I was about to ask my colleagues if they knew who was on the crags with these figures of whisky royalty when in walked Chris Thomson [head distiller at Lark Distillery] to tell us all about Bill and Tasmanian whisky. It was the first I’d heard about Tasmania and their whisky, and it was the start of a very long friendship with Chris, and of course Bill.
