Estoy fascinado con la corteza super dorada que le están quedando a estos panes que tienen un toque de semolin patagónico, que me trajo el Jeño de colijavetzky. Tiene un color más amarillo que al que estoy acostumbrado y se nota al hornear, lo mismo dice Maillard cuando "reacciona". La fórmula para los interesados es: 88% harina 000, 12% semolin, 70% Agua, 20% masa madre, 2% sal. Gluten Morgen a todos.

This is my everyday sourdough. With 4kids and a company to run, this is a managable loaf. 900gram of wheat. 140 grams starter. 3tbsp salt and 600ml h2o. Mix it. Form it. Let it rise for 8 to 10 houres. Bake it at 250degr. It's not perfect but very eatable. #sourdough #everydaybread #homebaked

Seems like 80% is gonna spread with this flour (Bob’s organic AP white) no matter how many folds I make. Baked same day at around 40% risen during final proof. Not a bad thing besides no ears and not as tall though, with the crumb getting airy pockets throughout. Using a slightly higher proportion of starter might have helped too. Trying something a bit different for lunch today. Still had leftover carrot and red cabbage which I stir fried with spinach and garlic. I added beetroot powder (which explains the red colour) and layered on top of some sourdough bread. Quite happy with how it turned out in the end!
