#Friday breakfast inspiration. Veg Vermicelli Noodles and a glassful of Apple-Carrot-Beetroot juice with a hint of fresh lemon. For the Vermicelli Noodle (Serve 2) 1 cup pre-boiled Vermicelli noodle(I have used whole grain durum wheat vermicelli) 1/2 cup mixed Vegetables of choice, chopped 2 small Garlic cloves, crushed and chopped 2 Spring Onions/Onion Greens, chopped 1/2 tsp light Soy Sauce 1/2 tsp Tomato Sauce Black Pepper powder for seasoning Salt for seasoning 1 Tbsp oil for frying Method 1.Heat the oil in a wok or pan on medium and add garlic. Add the chopped vegetables and sauté. 2. Add the soy sauce, tomato sauce, salt and fry the vegetables for 3 minutes. 3. Add the boiled vermicelli, black pepper powder, chopped onion greens and fold in and fry for another 2 minutes. 4. Gah!! My heart is full, smile bursting and pretty sure I had a couple of happy tears. Emotions are high tonight. Had my ish together today!! As promised, here's the deconstructed egg rolls!! So simple, SO much flavor! •1 lb ground sausage •1 bag dry coleslaw mix •5 cloves garlic, minced •1/2 cup soy sauce (low sodium) •1 teaspoon ginger -Brown sausage in large skillet. -Combine garlic, soy sauce, and ginger in a bowl; set aside. -Once meat is brown, add dry coleslaw mix and combine. -Add in soy sauce mixture and stir to combine. Cook over medium heat for 5 minutes or until slaw is wilted, but still crunchy.

A pot of hot beans goes a long way.... #ALLYOUGOTTADOIS Start with some chopped onions + garlic in a oiled pan. Season your onions well. I used ( willyumspice turmeric, celery salt, peppers essence, smoked paprika). Once the flavor starts to cook into the onions add in your beans. I presoaked my black beans over night so this too less than 30 mins. Add in a few cups of broth, any kind will do. Add a few handfuls of kale, Let simmer for 20-25 mins. Served up with a side of brown rice a quick pico de gallo(tomatoes+ purple onions+ garlic+lemon+cilantro). Parmesan Flounder with Garlicky Spinach and Roasted Tomatoes for one. Grated parmesan blankets one mildly sweet and flakey wild caught flounder fillet to create a beautifully brown topping when baked while organic spinach chopped fresh garlic create the perfect simple base.  A dollop of yogurt olive oil butter blend extra virgin olive oil drizzle a dash of sea salt freshly ground black pepper and smoked paprika provide the simple finish. Some days I just don't have the time or energy to make a full-on follow-the-instructions meal. Instead, I make dinner for just myself, with simple roasted veggies and a small side of protein. Oh, and guac, because I'm an addict. This meal covers the macros nicely: carbs, fat, and protein all beautifully (and simply) prepared.
