ALL the good food (and coffee) to recover from my long ass shoot day yesterday 🍓🥒🥙🍴 After a lot of exercise I am *obviously* more hungry, and in need of fuel to help my muscles recover from all the exertion. Sometimes a raised appetite can feel scary, but remember that it’s your body telling you it needs more sustenance, and that is GOOD! Your body is your friend and listening to it by feeding it more wholesome food isn’t to be feared. Although if it starts telling you it “needs” a big slice of chocolate cake, maybe wonder if your body is really the one doing the talking...😜

(copied off our Facebook page SlimFitGorgeous) Seven-Layer Salad 😱😍 (recipe from Southern Lady) Makes 10 to 12 servings 5 cups chopped green leaf lettuce 2 cups seeded, chopped tomatoes 2 cups chopped yellow bell pepper 1 (12-ounce) package frozen green peas, thawed 2 cups chopped radishes 2 cups diced seedless cucumber Seven-Layer Salad Dressing (recipe follows) Garnish: shredded Cheddar cheese, crumbled cooked bacon 1. In a 3 1/2-quart glass bowl, layer lettuce, tomatoes, bell pepper, peas, radishes, and cucumber. Top with dressing, spreading edges to seal. Cover, and refrigerate for 4 hours to overnight. Garnish with cheese and bacon, if desired. Threw some salmon on the stove tonight 🐟 and it was delicioso! I just seasoned it with lemon pepper and salt. I also made an arugula salad 🥗 with cherry tomatoes 🍅 + cubed avo 🥑! The dressing was lemon juice 🍋 + dijon mustard + olive oil + garlic powder + s&p!

5 minute salads are not always perfect looking but they most definitely are a staple of a FIT life! Here’s how to put this one together: _____________________ * SPINACH BASE: I get huge bins of prewashed, organic baby spinach at the beginning of each week. I eat it raw, steamed or blended in smoothies. If the week is coming to an end and I have a ton left (unlikely, but it has happened) I freeze the leaves for smoothies later on. * DRESSING: The HonestlyFIT cashew wasabi dressing. It’s unreal. Everyone who has tried it is obsessed! I make a batch each week and keep it in my fridge. Recipe in the ‘Well’ section of the blog. * HEIRLOOM CARROTS: These lil guys are from my imperfectproduce box! A great thing about eating from a produce box is getting exposure to seasonal items that are super tasty and unique. You can quickly make your carrots look fancy by making ribbons with a vegetable peeler. * CHICKEN BREAST: I bought 2 of these at the Whole Foods deli counter a couple days ago because I knew I wanted chicken at some point this week but was in no mood to actually bake 🤷🏼‍♀️. * SOFT BOILED EGGS: ok so technically these take ~6 minutes to make, but I had one in my fridge from yesterday. I typically cook 4 at a time so I have these awesome protein sources available whenever I want. * ALMONDS: Had these in my pantry, just chopped them up. * NORI/SEAWEED: Also had this in my pantry, used herb scissors to cut the sheets up. Seaweed has minerals, iodine, iron and calcium which support healthy bones, brains and metabolic function. The green comes from chlorophyll, which is a detoxifier and blood purifier. * NUTRITIONAL YEAST: Again, I keep a ton of this in my pantry. It adds a richness to whatever I sprinkle it on top of and is loaded with important nutrients like B12 and iron. Purchased at Trader Joes. * EVERYTHING BUT THE BAGEL SEASONING: Also from TJS and so good on anything you’d normally add salt and pepper to! NOURISH BOWL 🍚 _ Inspired by a photo from georgies_grub I called this a 'superfood bowl' on our menu plan but truth be told, I'm not remotely convinced on the authenticity of that word, so it's a nourish bowl instead. And not restaurant quality! It doesn't require much technical skill, though is a faff, but the pay off is an incredible amount of varied nutrition in one bowl! _ This one consists of all the following split between two: * roasted kale - spread half a bag of kale on a roasting tin, drizzle with oil and seasoning and roast for 5-10 minutes at 200oC until the edges start to brown _ * half an avocado sliced thinly _ * 1 large carrot 🥕 spiralised with a few drops of lemon juice to prevent browning _ * 1/4 large red cabbage sliced thinly and then tossed in a dressing of: 1 tbsp olive, 1 tbsp white wine vinegar, 1/2 tsp dijon mustard, 1/2tsp honey and a dash of salt whisked together _ * 1/3cup edame beans fried from frozen with 1tbsp sesame seeds until starting to brown. _ * soft poached ethical egg (as many as you want) _ * 8 whole almonds, bashed to break them up slightly and fried with 1 tsp oil, 1 tsp honey (I used my special himalayan one!), a few chilli flakes and a good pinch of rock salt. Stop cooking before they burn or sugars become too hard. _ We served ours with garlic bread and my husband had left over potatoes from yesterday too! 👍
