Not the most prettiest looking cake but certainly one of the tastiest one I’ve made so far.🤤🤤 It’s a soft chocolate sponge with a coffee flavoured butter cream and chocolate ganache (made without cream). . . CHOCOLATE SPONGE : 1 egg 90 g caster sugar - 70 g rice flour 2 tbsp gluten-free flour 1 tbsp cocoa powder 1 tsp baking powder 1 tsp vanilla sugar - 4 tbsp rapeseed oil 50 ml milk 50 g melted dark chocolate . Method: 1. Whisk egg and sugar until white and fluffy. 2. In a separate bowl mix the dry ingredients and place aside. 3. Add the oil and milk and whisk for a few seconds. 4. Add the flour mixture and whisk well. 5. Lastly add the melted chocolate and mix with a spatula. 6. Pour it in a lined 6” tin and bake for 25-30 minutes on 175℃ (on the middle rack) —————————- SUGAR SYRUP: 50ml water 45g caster sugar A few drops of vanilla essence. . Let the water and sugar come to a boil and cook it for 1 minute, remove from heat and add the vanilla essence (syrup should still be watery). . When the cake has cooled, cut it in half and drizzle the inside of both layers with all of the syrup. —————————— BUTTER CREAM: 30g soft butter 60g icing sugar 1 tsp instant coffee 1 tsp boiling water - 1. Dissolve the coffee in boiling water, let it cool. 2. Whisk the butter until smooth, start by adding half the icing sugar and whisk, then add the rest along with the dissolved coffee. Whisk until combined and fluffy. 3. Pipe it all on to the bottom layer of the moist cake then place the top layer onto it. Now it’s time for the ganache. —————————— GANACHE: 2 tbsp milk 65 g chopped dark chocolate About a teaspoon of butter. . Heat the milk in a saucepan till it almost comes to a boil, then add the chopped chocolate. Once the chocolate has all melted add the butter and mix until smooth and shiny. (You might need to heat it slightly if it seems too thick). OATMEAL RAISIN COOKIE OVERNIGHT OATS // I swear this tastes just like an oatmeal raisin cookie (if you didn’t already gather that from the title.) Overnight oats are so much easier to make than regular oats and there’s way less mess and pots to clean. Also, sometimes I don’t like to eat something clumpy and warm... but that’s just me. Anyway, here we go! 💃🏻 • RECIPE: - 1/2 cup whole grain oats - 1/2 cup steel cut oats - 1.5 cups plant based milk - 1/3 cup raisins - 1 tsp cinnamon - 1/4 tsp terrasoul vanilla bean powder - 1 tbsp chia seeds - 2 tbsp terrasoul raw cacao nibs - 2 tbsp maple syrup. • Whisk all ingredients together in a mason jar or plastic container until completely combined. Let sit in fridge overnight and eat in the morning! Tonight's dinner: Corned Beef Aglio Olio w/ Fettuccine. Ingredients: 1. A small can of corned beef (mine was already opened and used by almost half, but if you still have the full can, great!) 2. Six cloves of garlic, slice thinly. (Plus extra garlic powder; optional.) 3. One green chilli*, cut lengthwise, de-seed half cut, keep seeds on the other half; slice. 4. Black pepper 5. Fine salt 6. Smoked paprika powder 7. Parsley flakes 8. Grated Parmesan, for garnishing How to: 1. Bring a pot of water to a boil. 2. Salt the water (liberally). 3. Put in pasta, give them stirs to avoid sticking. 4. Heat up a pan with medium-low fire and immediately put in the garlic slices; this will heat both up at the same time, and lessen the risk of burning the garlic. 5. Fry gently for a few minutes (3-4), then put in the sliced chillies; fry for another couple of minutes. 6. Next, put in the corned beef, and mix together (I used a wooden spoon). Give about a minute or two, keeping the fire at medium-low. 7. Sprinkle in the garlic powder, smoked paprika powder, and black pepper; mix well. 8. Add a little bit of cooking pasta water, to de-glaze the pan; corned beef does have the tendency to stick. This will also give a nice, creamy effect. 9. Add just little bit more of salt 10. Check the pasta; should be al dente by now; turn the fire off the pot and transfer the noodles directly to the pan with tongs. Mix well. 11. Sprinkle in the parsley flakes, give another mix. 12. Transfer to a plate or a bowl, drizzle with a little extra olive oil, sprinkle a little extra parsley flakes, and a bit of Parmesan. * = Technically, an Aglio Olio should be properly spicy, so use red chili or small bird eye chillies for that true kick of heat and spiciness. Mmm this mixed berry #oatmeal topped with pumpkin seeds & cashews was so perfect this morning after my HIIT workout 💪 super nutritious and satisfying ✔️ I simply cook my rolled oats & chopped dates with water, then once fully cooked I mix in frozen berries, then add my toppings 😁✌️
