INGREDIENTS 5 cloves garlic, finely chopped ¼ teaspoon saffron threads, pulverized ½ teaspoon ground ginger 1 teaspoon sweet paprika ½ teaspoon ground cumin ½ teaspoon turmeric Salt and freshly ground black pepper 1 chicken, cut in 8 to 10 pieces 2 tablespoons extra virgin olive oil 3 medium onions, sliced thin 1 cinnamon stick 8 calamata olives, pitted and halved 8 cracked green olives, pitted and halved 1 large or 3 small preserved lemons (sold in specialty food shops) 1 cup chicken stock Juice of 1/2 lemon 1 tablespoon chopped flat-leaf parsley PREPARATION Mix garlic, saffron, ginger, paprika, cumin and turmeric together. If not using kosher chicken, add 1/2 teaspoon salt. Add pepper to taste. Rub chicken with mixture, cover, refrigerate and marinate 3 to 4 hours. Heat oil in heavy skillet. Add chicken, and brown on all sides. Remove to platter. Add onions to skillet, and cook over medium-low heat about 15 minutes, until lightly browned. Transfer to tagine, if you are using one, or leave in skillet. Add cinnamon stick. Put chicken on onions. Scatter with olives. Quarter the lemons, remove pulp and cut skin in strips. Scatter over chicken. Mix stock and lemon juice. Pour over chicken. Cover tagine or skillet. Place over low heat, and cook about 30 minutes, until chicken is done. Scatter parsley on top, and serve.

Um zu verstehen, warum der „Bang!-Bang!-Brokkoli“ so heißt, muss man ihn schon selbst futtern. Dann macht es klick und der leckere Aha-Moment folgt. Dafür brauchst du: 1 Brokkoli 100 g Mehl 75 g Speisestärke 1 TL Salz 1 TL Chilisoße 1 TL Essig 250 ml Milch 200 g Panko-Paniermehl Öl zum Braten So geht es: Schneide die Röschen vom Brokkoli. Wer mag, kann auch den Stiel aufheben, ihn schälen, zerteilen und später mit marinieren. Für die Marinade mische Mehl, Stärke, Salz, Chilisoße, Essig und Milch und rühre die Zutaten glatt. Ziehe die Brokkoli-Röschen nun durch die Marinade, dann durch das Paniermehl und brate sie schließlich in heißem Öl. Ingredients Serves: 8 ½ kg mutton mince 1 stick cinnamom (dalcini) Salt to taste ¼ teaspoon turmeric powder (haldi) ½ teaspoon cumin (jeera) powder 1 teaspoon coriander (dhania) powder 1 teaspoon garam masala ½ teaspoon red chilli powder 1 tablespoon ginger garlic paste 1 onion, chopped fine 3 green chillies, chopped fine 3 tablespoons besan (gram flour) 1 egg, beaten 8 hard boiled eggs Oil for deep frying 1 teaspoon chaat masala ½ cup chopped coriander leaves Lime wedges for garnish Food safe twine or rope Directions Prep: 10 min › Cook: 45 min › Extra time: 30 min chilling › Ready in: 1 hr 25 min 1. Wash and cook mince with 1 cup water, salt, cinnamon stick, and turmeric powder until cooked and all liquid dries up, about 20 minutes. Let cool slightly. 2. In a large bowl, add cooked mince and onions, ginger, garlic, green chillies, and all spice powders. Add beaten egg and gram flour and mix well. Refrigerate for at least 30 minutes so the mixture binds well later. 3. Peel the hard boiled eggs. Make 8 equal sized portions from the meat mixture. Take one portion of meat and flatten the meat in your palm like a cutlet. Put a hard boiled egg in the center and wrap the meat tightly around it. Tie a piece of thread around the wrapped egg. Repeat with the rest of the eggs and meat. If possible, refrigerate the eggs again. You can make the koftas till this step and refrigerate overnight. 4. Heat oil in a pan for deep frying. Fry the koftas. Cut the thread. To serve, slit the eggs in halves lengthwise. Высокопротеиновая паста из лапши удон (из гречневой, рисовой и кукурузной муки, 75гр) с козьей брынзой(50гр) и рукколой. Лапшу отвариваю до полуготовности и на сковородку на минуту с брынзой и зеленью. Салат из зелени, Черри и бальзамического соуса, который я готовлю заранее на несколько салатов. Прекрасно хранится в холодильнике. Смешиваю оливковое или кунжутное масло 20гр, бальзамический уксус 10гр и мёд 10гр, хорошо перемешиваю.
