BREAKFAST: Overnight oats LUNCH: Amy’s soup DINNER: courtesy of melisa_lynn . She made a veggie stirfry using this sauce from Food Lion(grocery store here in VA) which is why i shared the ingredients label. I’m going to try to make a sugar free version. She added extra ginger and soy sauce. The veggies consisted of spiraled zucchini, broccoli, carrots, sweet peppers, onions, org. Bean sprouts, water chestnuts. One of us will try this again soon!! Toooo yummy. We had a do over for dinner: rice, beans and orange salad. This time I added green lettuce to the orange, olives and onions combo. Super delish! . My 7 y.o. old said "I can't get enough of this salad. It's better than the rice and beans! " you know you're doing something good, when you're 7 y.o. enjoys salad! . Tonight's supper was a full 6Q pot of soup. I basically used leftovers I had in the fridge. Now the secret to use leftovers in soup is to start with fresh mirepoix. I used onions, celery, carrots and spices. Then I added water, the leftover quinoa mix (quinoa, peas, mushrooms and onions), hummus, and raw chopped potatoes. Slide to the left to see the soup bowl. . There was nothing left. The boy who doesn't like peas ate 2 bowls. The daughter who doesn't like mushrooms had 2 bowls. The littlest of the little ones who doesn't like peas and onions had 2 bowls. The husband who doesn't like cassava flour #farinhademandioca had 2 bowls with it in the soup. (Makes the best gruel 😋) my oldest daughter and I had to hold back and let everyone else eat too! 😂 . My husband's comments were " we need to buy a bigger pot." 😄 . Now what's the secret to getting everyone to eat what they don't like? 1) This was dinner. There was no other option. If they didn't like supper, then they wait until the next meal: breakfast. 2) They were all hungry. The last meal was lunch. 3) Stay consistent. I'll let them eat LESS of the food they don't like but they have to TRY. Always!! 4) I never offer options UNLESS it's option day. Let me explain. I have lots of leftover foods, you can choose what you would like to eat from the offerings in front of you. But if I'm fixing a meal, you'll eat what I fix. Or nothing at all. . I work part time at an alternative high school managing attendance and performance data. I see so many of these young people bringing in fast food, coffee milkshakes, energy drinks, and junk food. We have a few TVs that play a slideshow continually throughout the school so I added in some slides brain health information. So #momisgreat she baked us cookies. Not only we don't do school, we get cookies before lunch! 😃 #snowday . These were inspired by beamingbaker no bake 3 ingredients peanut butter cookies. The last photo is the raw dough before going into the oven. This can definitely be eaten raw. Actually it's amazing raw! On top of nicecream or just dough balls would be divine! I baked mine for 12 min in a convection oven at 350F. My recipe made 19 big cookies and they disappeared really quick. . Here's the recipe: 1 cup of natural peanut butter (warmed in microwave for 40 seconds) 1/2 cup of pumpkin puree (I had some in the fridge that needed to be used. I'm always cleaning the fridge and pantry. Hate to waste food. ) 1/2 cup maple syrup 2 cups of rolled oats 1 teaspoon of baking soda 1 teaspoon of baking powder Cinnamon, gingerbread spices and ground cloves to taste. Warm the peanut butter, stir in maple syrup, then mix in all the other ingredients. Spoon and flatten them onto a cookie sheet before you eat them all raw. Lunch today is a salad and a bowl of Thai Carrot Soup from hellonutritarian . I’m on my second week of her Power Prep Plan, and after a difficult morning at Urgent Care (for me, inflamed left eye from overstraining on my work computer, have drops, looks horrible, but feels better) , I don’t think I would have made these good choices if I hadn’t prepped yesterday. Everything salad for lunch. Just leftover veggies and greens with green apple and vinegar. Had an awesome "hot" oatmeal smoothie for breakfast - a couple of tablespoons of oatmeal, strawberries, almond milk, flaxseed, raisins, cinnamon and a few walnuts blended until warm. Tonight's treat... Chocolate cherry treat. Almond milk, dates, cocoa and dark cherries. A sweet ending to a good week. I didn't prepare as well this week and it made everything a little harder, still fairly easy, but harder because I had to scramble more. I ate a lot of portions of items I made extra of last week and froze. I definitely need to keep up that habit. I lost another 2 lbs this week. I am very proud of myself for sticking with the program despite temptations. I am also proud of myself for being vegan.
