Let me share with you my favorite way to use #overproofed #dough (or just excess dough): clean-out-the-fridge flatbreads. We had extra dough leftover from class yesterday, and I don’t need that many loaves in my life right now, so I left one batch out all night to overproof for lunch! This little guy was drizzled with olive oil, sprinkled with coarse salt and Aleppo chile flakes, studded with slices of blood orange and rosemary sprigs, and then sprinkled with scallions before baking, then very lightly drizzled with honey and sprinkled with cracked black peppercorn. As long as your dough isn’t so overproofed that it’s soup, this is one very good way to use it! #wildyeast #wildfermentation #naturallyleavened #natchlev

My buddy Chris Sy’s Country loaf from breadshophnl is on point. A little more than 30% whole grain - mix of whole wheat and rye. Fermentation is just right with a nice chewy texture. Happy to be back home with a good spot for bread.

The game is how many delicious things can you put on top of a slice of magnificent bread? Sourdough made by levainbakingstudio is some of the best I’ve ever had. Hundo % whole wheat sourdough. From the very start of RKB (almost 4 years ago 😱) the main objective was to make bread that highlighted whole grains. We wanted to use the highest quality flour we could find and get a wide variety of alternative grains. We did this for nutritional purposes of course, but also because we wanted to show off all the flavour whole grains have to offer. Which is SO MUCH! I don’t like going into this territory on the net BUT some people even find that they can digest whole grain sourdough bread much easier than store bought white bread. So if you’re having issues with bread, gluten may not be the culprit.
