dinner tonight is chicken & veggie soup that i made with my mom! it is onion, garlic, carrots, celery, shredded chicken, eatbanza pasta, and spinach all topped with simplemills sea salt crackers 🍲😋 . . . -first step is to cut up the garlic, onion, carrot, and celery .. you can honestly do as much of each veggie as you want ! just make sure to adjust the chicken broth as you add more veggies -sauté all the veggies until soft and fragrant and then add as much chicken broth as you think you need (we used about 8 cups) .. but it all depends on how you like your soup -next add in shredded chicken .. we used shredded chicken from a rotisserie chicken, but it’s also easy to just boil a chicken breast or two and then shred that for this soup -at this point i separated a little bit of the soup from the rest of my family’s and added some leftover eatbanza pasta and fresh spinach (this is a really simple thing to do if the rest of your family or whoever you eat with does not eat the same way as you!) -also season with s & p throughout! . . . this dinner was so yummy and honestly such a good way to pack in the veggies, especially loads of spinach ! it’s also so amazing to have a bowl of hot soup after a cold day 😊👍🏻

Okay once you make homemade flour tortillas you will NEVER want to eat store bought again 🙅‍♀️ Swipe right for a close up of these bad boys 😍 Topped here with sous vide flank steak, wholefoods guac, elyucateco_hotsauce habanero hot sauce, feta cheese and kale micro greens. . . Flour Tortillas- In a mixing bowl, combine 1.5 cups of flour, .5 tsp salt and .5 tsp of baking powder. Stir in 3 tbs of canola oil- mixture should start to clump together. Add a .5 cup of warm water (heat for about a minute in the microwave first). Combine well. Scoop mixture into cookie dough sized balls and place on a floured surface. Cover balls with a towel and let rest for about twenty minutes. Roll out balls with a rolling pin. Heat a skillet over medium high heat. Set tortilla in pan, flip once it starts to bubble. Cook other side for around 30 seconds or until golden brown. Remove from heat and repeat. . . Sous Vide Flank Steak- Season with salt and pepper than marinate in evoo and fresh garlic. Follow instructions on anovaculinary sous vide for flank steak. Once finished sear quickly in a lodgecastiron cast iron skilled on high heat. Rest for around 5 minutes than slice and serve.

the base of tonight’s dinner was yesterday’s lunch ! i didn’t put dressing on the whole salad at lunch yesterday so it was perfect to bring home ... i took off some of the tortilla chips and cheese and added a couple toppings of my own ! 😋 mixed greens, grilled chicken, tomato, corn, cheddar jack, brussels, zucchini, and simplemills almond flour crackers for a little crunch ! 👍🏻 . . . brussels - these were just leftover from last night .... see that post for how to make them ! zucchini - sauté chopped up onion in avocado oil until soft and fragrant and then add in the chopped zucchini ... i also threw in some corn and turned the heat up to medium high to get the veggies all a little crispy and brown . . . everything else was from the restaurant which made this dinner so easy and fast to whip up! i used a little yogurt ranch dressing and just some lemon juice ... so yum 🌽🍅

today’s breakfast is basically the same as yesterday ! it was so good i had to make it again today .. except double 😋👍🏻 sietefoods almond flour tortillas topped with kitehillfoods chive cream cheese, spinach, turkey breakfast sausage, and last but not last two fried eggs 🍳 . . . -first i heated two tortillas in a pan -then i spread kitehillfoods cream cheese on both tortillas and piled on some spinach -next i chopped the sausage into tiny pieces and sautéed in fourthandheart ghee until crispy - lastly i fried two eggs in the ghee (covering the pan to cook them through), put them on top of the tortillas, and topped with salt and pepper . . . idk how today’s breakfast could be better than yesterday’s ... but it was ! 10/10 recommend ! 💯

dinner tonight was eatbanza chickpea pasta with shredded chicken, spinach, and marinara sauce & sautéed brussels all topped w some parm cheese 😋 . . . - brussels: first i sautéed onion in avocado oil until soft and fragrant and then just throw in the brussels sprouts ( cut in half ) and sauté until golden and crispy! make sure you let them sit face down to really get the color ! -sauce : one again start with sautéing onions then add the marinara and shredded chicken (mine is from the roman chicken i had a few dinners back) and simmer until the pasta is cooked .. then just add in the pasta and you are good to go! 👍🏻🍝

🎉THERE ARE EVEN MORE FLAVORS OF DESSERT HUMMUS🎉 I hit the jackpot, Whole Foods only had one BROWNIE BATTER flavor left on the shelf so i bought it as well as SNICKERDOODLE & VANILLA BEAN!!!! SOOO GOOD!! We literally eat it straight up it’s that good!! Serving size is 2 TBSP, with only 50 calories. Not gonna lie we easily double that and eat it like pudding😍😍

today for lunch i went to a mexican place with my mom and sister & i got the bbq chicken salad ! it was mixed greens, roasted corn, tomatoes, tortilla chips, grilled chicken, avocado, and cheddar jack cheese 🥑🌽😋 . . . one tip for eating healthier when you go out is to order the dressing and sauces on the side so you can control how much of it you want ! but also it’s important to not stress about being extremely nutritious and just enjoy some yummy food ... bc ofc i had more than a few nachos! 😂👍🏻 #balance

this breakfast was literally amazing ! #messybutdelicious i made a sietefoods almond flour tortilla topped with kitehillfoods chive cream cheese, spinach, and a fried egg ... so freakin good! 🍳 oh.. and ofc with some fresh berries on the side 🍓 . . . this was honestly so fast and easy! first i heated up one tortilla in fourthandheart himalayan pink salt ghee, then i spread on some kitehillfoods chive cream cheese, piled on some spinach, and last but not least i put my egg fried in ghee on top! (one of my fav things was how the hot egg basically cooked the spinach and i didn’t even have to sautée it!) . . . this one pan breakfast was perfect to start my saturday! i probably would have had two of these, but i’m having an early lunch with my family ... so i didn’t need that much! anyways ... happy weekend everybody! 👍🏻
