🎃M I T T A G E S S E N🎃 Kürbis Muffins mit Paradeiser🍅 vom Backofen und Frischkäse Sauce🍽 🎃 1 Butternusskürbis (sind ca 800g grob raspeln) 🎃 1 Zwiebel 🎃 4 Scheiben Schinken 🎃 75g Frischkäse Light 🎃 10g Flohsamenschalen 🎃 2 Eier 🎃 Salz, Pfeffer und Knoblauchpulver Für die Paradeiser🍅: 🍅 ca 300g Kirschtomaten (diese halbieren) 🍅50g Frischkäse Light 🍅 Salz, Pfeffer und Tomaten Gewürz Zwiebel glasig anbraten und den Schinken hinzufügen. Die warme Masse mit dem Frischkäse zum Kürbis dazugeben und unter rühren. Danach die Eier und Flohsamenschalen unterheben. In eine Muffinform geben und bei 180 Grad Heißluft 25 Minuten backen. Die Tomaten in eine Auflaufform geben und dazu in den Backofen stellen und 15 Minuten backen. In der Zwischenzeit den Frischkäse mit den Gewürzen vermischen und danach mit den Tomaten vermischen. The picture on the left was taken around Christmas time 2016. The one on the right just a month ir so ago. One left I was bloated, uncomfortable and somewhat embarrassed about my appearance. On the right I have confidence, strength and am happier. All is took was developing the mindset that I can do this. I still have bad days, don't get me wrong. But I don't let those days define all of my days and I continue to work at being the best version of myself. Being a role model for my daughter is gives me such motivation.
