NGL I've yet to find a smoothie place in NYC that beats souppeddler in Austin. I lived there for the last year and their smoothies gave me LIFE I swear (perfect hangover cure FYI haha)! Breakfasts with the usual eggs and coffee 🍳 ☕️ switched flavours up a little and made crispy Cajun veggies to go with the poached eggs and avocado. Great way to use up the contents of my fridge and I had a new recipe in under ten minutes! . . 2 eggs 1/2 avocado 1 sweet pepper, sliced 1 small onion, sliced Handful kale 1 small chilli, sliced 2 cloves garlic, crushed 1 tsp paprika 1 tsp cumin Coconut oil to fry . . Melt the coconut oil in a nonstick pan and fry the onion, pepper, chilli and garlic for about 4 minutes then add the kale, paprika and cumin and cook for further couple of minutes until cooked but still crunchy. Meanwhile, crack the two eggs into gently simmering water and cook to your liking (I poach for 4 minutes to get a gooey yolk👍🏽). Serve eggs on top of the veggies and serve the avocado on the side. Season with salt and pepper. #paleopeach10
