Place 1 1/2 c chocolate chips in glass bowl. (Add flavoring at this time. I used 2 drops Peppermint EO) Heat coconut milk until it simmers. Pour over chocolate chips and cover 2-3 minutes. 2.Stir chocolate until mixed to a ganache texture. Place in refrigerator to cool 2 hours. 3. Form 1 teaspoon size balls and place on parchment paper. Freeze 1-2 hours. 4. Melt remaining chocolate chips and coconut oil.5. Dip balls in chocolate! You need to work fast as the chocolate hardens fast.Enjoy!
