Continues from my previous post ... The sweetest of Indian desserts, made with lentil flour ,served warm and easy to prepare. Traditionally moong daal halwa is made in #ghee and sugar. I wanted a healthier version , hence I made it completely vegan and sugar-free ! So here's the recipe !!! 1 cup moong daal Flour ( moong is a split lentil that's yellow colored. You can buy the flour at an Indian grocery store) 3/4 cup coconut milk or almond milk 2 tablespoons coconut butter/oil or almond butter 1/4 cup of chopped and lightly roasted mixed nuts ( I used almonds cashews and raisins) 1 pinch of cardamom powder( you can skip this too) Few strands saffron (this is also optional) Sweetener of your choice- I used 1/2 cup of jaggery powder. Procedure In a non stick pan add the butter and roast the flour till u get a nice aroma or till the color changes to a light pink. Add saffron and cardamom and nuts. Add the milk little by little and keep stirring. Put on a lid and on low heat let this cook for about 10-15 minutes. Keep stirring every 2-3 minutes . Add sweetener . Give a good mix and cook for another 2-3 minutes. Garnish with nuts. In case if you find it too stock add more milk and reheat. This can easily be stored in the fridge for 2-3 days. Reheat and use. When you fail to plan, you plan to fail. These last couple months have been a time of many changes, which is a terrible excuse for why I haven’t been as dedicated to my health and fitness. Every week I’ve told myself, “I’m gonna get better. I’m going to eat better.” And then I don’t follow through. That’s because I haven’t been planning. So last night while I stayed up late waiting for my laundry to be done, instead of wasting my time watching Netflix, I pulled out my cookbooks and planned all my meals for next week, wrote up my workout plan for next week, and made my grocery list.
