I’m a big Thanksgiving person, hence why I’ve been already eating thanksgiving meals before the actual day (check a few posts back for proof). And that’s kind of interesting, actually, since I wasn’t born nor raised in America. I came here at the age of 17 for college only, with the intention of returning to my home in Ecuador after graduating (however, I fell in love with the man of my dreams and then everything changed).👫❤️🤷🏻‍♀️ . To my defense, I did go to a private American school in Ecuador from k-12 and my dad grew up in Washington DC until he was about 8 years old. So there’s that. . Do I over share on my Instagram captions? Abbbbbbsolutely! 😜 . Anyway, Thanksgiving is big for me. I love watching the Macy’s Thanksgiving Day parade in the morning (probs my favorite tradition), getting a nice workout in to build my appetite for the big meal, dress up and get pretty, and head to my husband’s family’s house to spend some quality time together. . But the part I look forward to the most? The food. 🙌 Ahhh, the food. I am mostly Paleo, eating gluten free and dairy free, so I stick to the turkey, salads, dairy-free side dishes (mashed potatoes, sweet potatoes and Brussels sprouts) and then usually drink my dessert in the form of wine (skipping all the sugary, full-of-gluten treats). . Some years, however, I really don’t feel like missing out on Pumpkin Pie. So what do I do? I make it Paleo! . I have a really easy and tasty Paleo Pumpkin Pie recipe that I think you’ll enjoy. In my last post I shed some light on the meaning behind my Instagram name - here I delve into another topic of interest - My Personal Food Philosophy. ______ After completing my 1st round of #whole30 in 2014 I concluded that I had a variety of sensitivities. These suspicions were later confirmed with allergy testing which prompted my transition to a “paleo-inspired” lifestyle, which you’ll see outlined below ⬇️ ______ •No gluten (While I’m not Celiac, I do experience some adverse side effects (rash, extreme bloat & overall digestive discomfort) after consuming it. Seeing as there’s clearly some level of sensitivity there, I tend to avoid it). •No refined sugar (When possible, I avoid products with “sugar”, “high fructose corn syrup” and the man-made chemical sweeteners (splenda, stevia, etc), as well as sugar alcohols, like xylitol. I now use raw honey, maple/date syrup & coconut sugar. •No dairy (I'm lactose intolerant & never liked milk but love nut-based milks/creamers/yogurt so I don’t feel like I’m missing out!) •Some gluten-free grains (I have been able to successfully re-introduce granola, some varieties of gluten-free pasta, cassava tortillas, quinoa & brown rice without adverse side effects). •Plenty of healthy fats (Avocados, olive/coconut/avocado/grape seed oils, ghee, nuts, seeds, etc). •Packaged items with less than 5 ingredients (The specific number you adopt is arbitrary, but the more ingredients in a packaged food item, the more processed its likely to be). •High quality meat + eggs (Typically from animals that were grass fed/pasture-raised. I try to steer clear of meats with preservatives and color or flavor enhancers, particularly added nitrites). •A variety of colorful fruits + vegetables (Local and organic when I can. The less transit time there is between the farm and you, the more nutrients the produce retains). ______ Curious about my fave whole30 friendly products? KALE SALAD with CRISPY ROASTED CHICKPEAS 🌿✨ . The perfect summer side salad 🙌🏼 . . Massage Baby Kale, Beet leaves + Baby Spinach with Tahini + fresh lemon juice + fresh garlic + Himalayan pink salt + water to thin. You can use whatever green leaves you like. . . CRISPY ROASTED CHICKPEAS 2 Cups chickpeas (I used canned) peeled,rinsed, drained & DRIED 1 Tbsp oil (coconut, avocado or olive oil) 2 Tbsp Cumin 2 Tbsp smoked paprika 2 Tbsp ground coriander 1/4 tsp Pink Himalayan salt . Preheat oven to 200deg Celsius, Toss chickpeas with oil & salt. Spread onto a baking sheet. Roast for 20-30 mins until crispy & golden brown (give the pan a shake every 10 mins..but be careful for popping chickpeas) Toss Chickpeas with spices to coat evenly. ***only add the spices AFTER roasting .. this way you prevent them from getting that burnt bitter flavor!! . . We had this salad along side chicken fillets that I’d crumbed with Almond meal. Kobi has always loved roasted chickpeas.. I think all kids do?
