I am excited like a kid because tonight - after 10 days of waiting - I finally got to cut up my Quince Pâte De Fruit! It was hard to wait so many days, but I really wanted to follow the traditional recipe that requires 10 days of drying for the Pâte De Fruit to reach an optimum texture, for the tastes to develop fully and for the color to become this beautiful. The recipe of this delicious Christmas treat from Provence will be posted on the blog soon...
