Your biology is perfectly adapted to your most natural environment. So it only stands to reason, and backed up by research, that the most natural form of something is best. We run into issues when we pull out or extract elements of the whole. Isolating something from it's natural context more often than not makes it less effective, less available and even potentially harmful. Take fruits and vegetables for example, fructose is the form of sugar present in these food sources. Fructose must be processed in the liver in order to be utilized in the body. When it is encapsulated in it's natural context, ie the whole food, the fiber from the pulp slows absorption of the fructose creating a lower glycemic effect in the body. An apple, for example has a relatively low amount of fructose and therefore less likely to create a strong insulin release and thus allowing for a more natural satiety response. However, when we extract the fructose or other elements from the context of the whole, it concentrates the fructose, makes it easier to absorb and overwhelms the liver. That healthy, organic fruit juice you buy at Whole Foods could be making you sick. You can also expand this idea to include and make a compelling argument for our favorite topic....nose to tail eating. What we have done in modern times, especially in the west, is isolated the muscle tissue as the sole component of the animal we consume. We have taken this aspect of the food source out of it's context. Though there is great value in Grassfed beef muscle, it is substantially lacking in nutrient density as compared to the organs and other constituents present in the whole animal. Consuming nose to tail provides you with the nutrient profile your body requires to function optimally. It is more natural, or native if you will, to our natural diet to consume whole foods and the whole animal. Never had my you as flower this much! So exciting (yes I'm a dork). Should be off IV antibiotics on Thursday if the Infectious Diseases Team gives the OK. Will be starting Cellcept a week after I go off them. It will hopefully mean that it will slow down my antibody production and I won't need plasmapheresis even more often than I do. Thursday Food diary:✔️👌 I had 🌱Vegan Tropical Strawberry Superfoods with spinach, berries, coconut milk/water and some mct oil blended for the perfect smoothie👌💜 🌱Meal 2: steak, chicken, carrots, cauliflower, sweet potatoes 🌱meal 3: cauliflowe, carrots, sweet potato and 🌱 vegan Chocolate Superfoods (round✌️) shaken with coconut milk/water ....so pretty much had the same but different things today🤔 some days are like that.. 🔹So thankful for a new day today, a chance to start again. Yesterday was very rough because the day before I ate a protein bar.....well I spent all of yesterday feeling not like myself and extremely irritable. 🔹Don’t get me wrong I don’t mind eating a clean diet, but if you know anything about AIP it is very very restricted. 🔹Unfortunately grains and I don’t work well together so I will have to say goodbye to them for a while, hopefully not forever. In the meantime I am on a search to find some alternatives so that I can still enjoy food 😋 🔹I have also decided that starting in January I will begin sharing my food journey more closely as I find alternatives to the foods I can no longer consume. 🔹I know it’s difficult to transition into a new diet and Im hopeful that in sharing this I will be helpful to others who are in my same position or similar.

Today is #GivingTuesday. And what does that have to do with beautiful food (top photo) and illness (slide photo)? It’s a Tale of Two “Cranberry Sauce” photos. Trigger warning: slide to the second photo, and let me tell you a story. In August, I got bit by a dog, the bite got badly infected, I was given medication that caused more inflammation because it contained corn gluten, and I suffered through the symptoms of Celiac Disease all over again after a three-day stint in the hospital. I was treated by one doctor as if Celiac Disease wasn’t even a real disease; another was assigned to me and she “got it”. At the hospital, few knew how to feed me, few checked the medication for my allergens. (I had to constantly ask them to check), and I suffered whenever anyone made a mistake. Being my own advocate is hard enough. But today on Giving Tuesday, there is hope. The Center for Chronic Illness is raising funding to continue support groups and build the platform for digital education and web-based programs so that more people like me can can get the support they need. They have asked if I might want to contribute seminars to help their members, and I am honored to do so. CCI is a selected Giving Tuesday matching funding recognized org, which allows them to receive matched funds from the Bill and Melinda Gates foundation TODAY ONLY (and matched funding will likely run out by 10am PST). 11/9/17~Endoscopy Pill Camera...One of many tests I have endured since being diagnosed with Ulcerative colitis & Crohn's on 10/4/17. The pill-cam took approximately 50,000 colored pics of my digestive track, & my small & large intestines. I am so amazed by this! The pictures were sent to a monitor that I wore for 8 hours. As I sit in oncology having my 2nd last infusion for this year, I’ve had a chance to process the past 3 years since getting sick with an Auto lmmune Disease. I’m surprised that you actually ‘get used’ to the pain in every joint, the tiredness, the medications, getting a ‘cold’ & needing antibiotics to get better! Having to wear a face mask so I don’t get sick, lacking a protein which produces tears to cleanse my eyes, not being able to walk more than 5 mins, blood tests & rehab. I’m not alone as there are many people suffering Auto Immune Disease’s. The problem is ‘you can’t see it’....You look ‘normal’ but only close family members understand what you go through. I’ve found the best medicine for me is to be positive & constantly focus on good things in my life. I focus on my beautiful family & friends, my garden & baking when I’m well enough. I’m Sooo grateful infusions are available to me to keep me out of a wheelchair! We live in a great country😊 #autoimunedisease #rheumatoidarthritis #begrateful #positive #greatcountry
