This time of year I step up Nora's smoothie recipe (and supplement regimen) to try to ward off illness. She always gets a multivitamin with methylated b, a probiotic, and a prebiotic fiber supplement. Although I don’t always eat grains, when I do, sprouted quinoa is a great option. This autumn/winter quinoa salad is a favorite of my hubby’s and has actually become a staple holiday side with my in-laws! It’s super flavorful with a mix of roasted carrots, dried cranberries, pecans, green apple, kale and pomegranate seeds. It’s easy to throw together, makes a ton and is great for leftovers! Here how you make it: 1 cup of sprouted quinoa (if you can’t find it already sprouted, just soak it in water for a few hours first, drain then cook) 4-6 carrots (depending on size), chopped ½ cup dried cranberries, chopped smaller (look for unsweetened or sweetened with apple juice) ½ cup pecans, chopped ½ large or 1 whole small green apple, chopped 1 packed cup kale, finely chopped 1 pomegranate, seeds extracted (optional) ¼ lemon juice or raw apple cider vinegar 1-2 tsp maple syrup, to taste (optional) 2 Tbsp avocado or olive oil Pinch salt & pepper Prepare the quinoa according to package directions (I did it in the Instant Pot) and allow to cool. (I usually pop it in the fridge or freezer. Preheat oven to 350 degrees. Chop carrots, toss with just enough oil to coat (coconut, ghee, avocado oil all work) and put on a baking sheet. Roast for 20-30 minutes or until soft and sweet. Remove carrots from oven and allow to cool. Once everything has cooled, toss all salad ingredients together in a bowl (everything in the list through the pomegranate seeds). Whisk together the lemon juice/acv, maple, avo oil and s/p in a bowl. You can either dress the whole salad, or just dress the portion you are eating and save the rest separate from the salad in the fridge. 🙌🏼 So, Keith and I have been working on perfecting our raw vegan pizzas. Oh my, they are delicious!! As of now we just use the oven to dehydrate our portabello caps on the lowest temperature for about 2 hours. Then we spread on a layer of our raw, sundried tomato marinara, before adding the most divine cashew cheese (a recipe we found online). Toppings for these were onions and fresh basil slivers.
